Eryngium bourgatii displays silvery-blue, cone-shaped, prickly flower heads amid gray-green bracts on tall stems. The dark green, thistle-like foliage shows silver veining. Sea Holly grows well in poor to moderately fertile, dry to average, well-drained soil. Dramatic in a hot, sunny border. Excellent fresh and dried cut flowers.
Clumping 2' tall plants have exceptional dissected white and green leaves, and brilliant, almost iridescent, blue and white star-shaped inflorescences - superb with burgundy Euphorbia. This is a Mediterranean plant that likes to bloom in July and August, and is one of the most satisfying of the Eryngiums. Minimum temperature: -20°F
The foliage of this Mediterranean species is prickly and deeply cut with beautiful silver tracery and marbling. The plump cobalt-blue thistle-like flowers are irresistible to bees. This peculiar genus from the carrot family is found around the world but with its centre of diversity in South America. There are also a number of European species.
Hailing from the Pyrenees, this easily grown perennial boasts a compact clump of crisp undulating gray-green foliage and decorative thistlelike blooms. The distinctive ground-level leaves are artfully chiseled into narrow segments and etched with striking broad white veins. Mustering long lasting cool-colored intrigue, the round, medium-sized blue-green flowers are tended by long iron gray linear bracts.
Very beautiful, very spiny leaves splashed with silver, with the usual blue flushed eryngium flowers in mid Summer. Only 18 inches tall or so, so a nice choice for a smaller garden. Zone 4.

Sea Holly. One of the best of the lot with great marbled foliage and blue thistlely flowers which are great for drying. Likes a sunny poor soil and is known for laughing disdainfully at Port Townsend deer, the modern rats of the new Millennium. Let this self-sow for best results.
Steel blue flowers and prickly green leaves with distinctive white markings make this an especially attractive perennial for the garden border. Leaves are striking when they emerge in spring to form a base for the 2' flower stalks of thistle-like, summer flowers. For full sun and sandy or well-drained soil. Accepting of summer water but a long tap root makes them both drought tolerant and difficult to transplant. Frost hardy in USDA zone 4.
