Ulluco is one of the famed ‘lost crops of the Incas’, native to Andes of Peru and Bolivia. A root crop, Ulluco is used much like the unrelated potato, but is smaller in size. Unlike the potato, the leaves and stems of Ulluco are also edible much like spinach, which make a fine leafy addition to greens either fresh or cooked. Growing as a groundcover, Ulluco is an interesting addition to the edible or ornamental garden. Cold hardy to zone 8 and above, or to 10 degrees Fahrenheit.
