The delicious 3-4” cabbage-green bulb grows above ground and just watching its bulbous, alien-baby-esque form developing is a fascinating and irresistible delight. Kohlrabi is a member of the cabbage family, but you’d never know by its sweet and slightly peppery taste or its apple-like texture. In fact, most Kohlrabi lovers peel and eat them raw, just as they would an apple or a radish! But they are also wonderful roasted to a caramelized state as a side dish, made into sauerkraut, or stewed and blended into a fantastically creamy soup for cold Winter nights. The leaves, like collard greens, are edible too! Grows quickly to 12”x6”, needing moist fertile soil - so give it a balanced fertilizer and consistent water. Harvest when the bulb is no larger than 4” for peak sweetness.
