An heirloom garlic, Spanish Roja surfaced in the Portland, OR area over 100 years ago and is thought to have originally been called Greek or Greek Blue garlic. (Puzzling, as it's neither blue nor from Greece as far as anyone can tell.) Like other rocambole garlics, the flavor of Spanish Roja is pungent, strong and rich. Easy peeling, with 8-12 cloves per bulb.
