Also known as “Lemon in a Leaf”, sorrel is a tart, tangy salad addition - also used for cooking classic dishes like French sorrel soup. When picked young, the leaves are very mild tasting; the flavor intensifies with age, so you can pick it at the right tanginess level for your palate. Cooked, the tartness subsides. The leaves keep 1-2 weeks in the refrigerator, or they can be frozen. Sorrel is a cool-season perennial (it can be grown as an annual) & ‘French Sorrel’ grows only 6-12” tall (unlike the weedy sorrels). Plant 1’ apart in rich garden soil or in containers 6 inch wide or larger. Harvest only young & tender leaves, but you can cut off all the leaves & it will rejuvenate the plant. Cut off any flower stalks that appear & divide every 3-5 years.
