This is the tomato most commonly used throughout Italy & elsewhere to make sun-dried tomatoes. Make your own! That way you can have summer tomato happiness all through the winter. Look online for various drying methods for the oven or dehydrator, or try Carol Manahan’s method – place newspaper lined racks in the back of your car & let steep in the sun until dry. It helps if, like Carol, you don’t use your car very often. ‘Princepe Bourgese’ grows compactly, but is very prolific, with grape sized, meaty fruits. Very flavorful!
