Eryngium agavifolium is a distinctive South American sea holly with apple green, serrated, elongated leaves rising from a central rosette that taken together resemble a century plant or Agave. In late summer the rosette produces a stem two to four feet tall with clusters of egg shaped inflorescences of white flowers. The flowering stems turn dark brown with age and give good winter interest.
Striking foliage in rosettes of spikey-edged leaves, to 18" long gets even better in summer when the Sputnik-like, burnished green flowers appear. Full sun to part shade. Regular summer water for best growth and appearance but tolerates summer drought as well. Deep rooted so not easily moved. Good for dried flowers and attracting bumblebees. Frost hardy in USDA zone 5.

This Agave impostor from South America has thick green leaves with spiny margins, forming a clump of rosettes to 18” or wider. However, unlike some Agaves, this plant won't keel over and die if it gets a little wet: in fact, about any range of soil moisture is tolerated. Thistle-like flowers on 5' spikes may appear in late spring. Very easily grown on any sunny or partially shaded site. Hardy to at least 5 °F. South America
